Cold Pressed Canola Oil from Gawłowo

Canola oil is valuable because of its health and nutritional values. Domestic canola oil is more often referred to as “the olive oil from the North” due to its almost identical biochemical component and health benefits.

Canola oil produced by Krzysztof Kowalski from Gawłowo is different from other similar items due to the fact that the seeds used in its production are not genetically modified. They come from his own farm where organic cultivation is practiced, which positively impacts the quality of the product. The oil is always fresh since it is custom made, not stored for extended time and quickly delivered to the consumer. Food prepared with this oil reflects its distinct taste and incredible aroma. The liquid is golden and transparent, without impurities and clouding. It has a mild taste with nutty and sesame hints.
On the farm, the plant has been cultivated since the 1950s and the tradition of oil pressing in the Kowalski family goes back for generations. Mr. Kowalski’s father and grandfather besides farming the land also made canola oil and this tradition is continued. In 2013 the cold pressed canola oil produced by Mr. Kowalski won the Marshal Laurel of the Mazovian Province in a food producers contest. It also received a recognition named “Quality,Tradition” awarded by the Minister of Agriculture and Rural Development for the national quality system and “The Pearl 2016” in the contest of the Polish Chamber of Regional and Local Product “Our Culinary Heritage – Regions’ Tastes”. The oil is registered on the list of traditional products underwritten by the Ministry of Agriculture and the farm of Mr. Krzysztof Kowalski forms part of the Mazovian Culinary Heritage Network. His product is requested by restaurants in Warsaw, Cracow, Katowice, Sopot and London.
On the first Sunday of each month from May to September, Mr. Kowalski presses oil in the Museum of the Mazovian Village in Sierpc. He uses equipment that belonged to his great grandfather.

Production Method
Canola oil is pressed cold and the process plays a crucial part in the quality of the product and in maintaining its healthy ingredients. The best quality is achieved in first pressing. Unfortunately, cold pressing is not very efficient: in order to make 1 liter of oil, 3 kg of seeds are needed. The oil is made under increasing pressure in a grinding vessel that has slits which allow the liquid to drain, while the pulp remains inside and eventually is squeezed outside through a hole at the end. This process takes place while the temperature of the seeds is kept at 15 to 25 degrees Centigrade. The next step is removing oil impurities through sedimentation and filtration or spinning. The oil cake can be used as a protein supplement in animal fodder.
